THE FERMENTATION PROCESS
We use the method of wild fermentation, meaning that we don’t add any bacteria cultures to start the process.
Once we have made our own ‘mother kraut’ we then use that to culture each batch of sauerkraut to ensure that beneficial bacteria is present.
The wild fermentation process ensures biodiversity amongst the strains within the product. We allow each batch to ferment over a period of 7-10 days.
Our products are handmade in Jan Juc, Victoria and use local and organic ingredients when seasonally available.

Ingredients: Cabbage, onion, apple, jalepenos, ginger, chilli flakes, turmeric powder, paprika, & Himalayan Rock Salt
A very un-traditional kimchi with a Mexican spin on it. A tasty kick of spice accompanies the Mexican aromas. Goes great with tacos, burgers and sandwiches, or even just on your eggs in the morning
