Maryland fillets are the deboned hind quarter of the chicken, they are great used in stir fry, casserole dishes and many other recipes.
As this portion retains a good level of moisture, it is ideal for BBQ and is commonly used in Middle-Eastern and Mediterranean cuisines (including yiros and shashliks)
