Vermicelli Noodle and Prawn Stir fry

Ingredients

200 grams vermicelli noodles

28 grams olive oil

400g prawns

3 cloves garlic
1 capsicum, thinly sliced

1 carrot, julienned
1 cup snow peas, trimmed

1 cup bean sprouts

3 tablespoons soy sauce
-
2 tablespoons oyster sauce

1 tablespoon fish sauce (optional)

1 tablespoon sesame oil

1 tablespoon lime juice

Fresh coriander or green onions
Directions
Cook the vermicelli noodles according to the package instructions. Drain, rinse with cold water, and set aside.
In a large skillet or wok, heat the oil over medium-high heat. Add the prawns and minced garlic, and cook until the prawns turn pink and opaque, about 2-3 minutes.
Remove the prawns from the skillet and set aside. In the same skillet, add the sliced bell pepper, julienned carrot, snow peas, and bean sprouts. Stir-fry for about 2-3 minutes until the vegetables are crisp-tender.
In a small bowl, whisk together the soy sauce, oyster sauce, fish sauce (if using), sesame oil, and lime juice. Pour the sauce into the skillet with the vegetables and stir to coat.
Add the cooked vermicelli noodles and cooked prawns back into the skillet. Toss everything together until well combined and heated through.
Taste and adjust the seasoning if needed. You can add more soy sauce or lime juice according to your preference.
Remove from heat and garnish with fresh coriander or green onions if desired. Serve the vermicelli stir-fry hot and enjoy!
